Essential for commercial bakeries, the BevLes Under Counter Insulated PICA Proofing Cabinet provides the ideal environment to facilitate the proofing process for yeast-raised dough. Designed to maintain a consistent temperature and humidity level, this proofing cabinet is constructed of durable aluminum and features a fully insulated top, sides and back. Universal extruded pan supports will accommodate a wide variety of pans and screens. The clear Lexan door with heavy-duty left hand hinges lets you easily see what’s inside without opening the door. User-friendly, bottom-mounted controls feature independent heat and humidity adjustment. Temperature ranges from 60° to 120°F (16° to 49°C) while the water reservoir holds up to 5 quarts (4.7 liters). Our BevLes "cast-in" humidity system prevents element burnout while providing added safety for the operator. This BevLes proofing cabinet has a self-draining feature for excess moisture collection below the cabinet. The unit is equipped with heavy-duty plate swivel casters with 5" (127mm) neoprene wheels, two with locks, for easy mobility. BevLes proofing cabinets are available in insulated and non-insulated, full, half, 3/4 and undercounter size models with right- or left-hand hinges. Ideal for everything from donuts to cinnamon rolls, the BevLes Under Counter Insulated PICA Proofing Cabinet lets you proof dough to perfection.
